Recipe: Dark chocolate truffles
Dark chocolate truffles
1 cup medjool dates
1 tablespoon coconut oil
½ a cup 70% chocolate - try and use a fair trade and organic brand for good quality cacao
2 drops vanilla extract Pinch of salt
Soak the dates. If they’re dried overnight, if they’re sweet, juicy and fresh, it's not necessary. Melt the chocolate and coconut oil carefully in an au bain marie. Drain the dates, keep the water. Blend the dates to a thick paste, use the date water if necessary to help the process. Add vanilla and salt. While blending add the chocolate mixture. Lay out on a tray and place in the fridge for 1 hour. Roll into teaspoon sized truffles - these babies are rich! Roll them in; Cocoa powder Cocoa nibs Coconut Sesame seeds Crushed nuts Pop them back in the fridge when you’re not eating them.
